After a very long and singularly useless thread about getting oil varnish off nonstick cookware, I bought some Barkeeper's Friend (the liquid/spray). For a while, though, it was clear I didn't have any actual use for the stuff.

Well, I found out what it's good for. Stainless steel. ... Wait, let me rephrase.

IT IS PHENOMENAL FOR STAINLESS STEEL I LOVE IT AND I WANT TO MARRY IT AND HAVE ITS BABIES.

There, that's more like it.

Ingredients:
------------

Oil to coat pan
1 small white onion, diced (3/4 cup?)
1 green chile, diced, seeds removed (note: CJS uses two)
2 tsp coriander
1 tsp cumin
1 tsp turmeric
1/2 tsp salt
1.5 tsp ginger paste
1.5 tsp garlic paste
1/2 cinnamon stick
1 lb chicken thighs, cubed
ONE OF THE FOLLOWING:
A) 1 tomato, juiced
B) 1/2 c water and 1 tsp tomato paste
C) 1 tomato, finely diced
OPTIONAL:
a) 2-3 tablespoons yogurt
OR
b) 1 tablespoon cream


Directions:

Heat the pan a little, if not nonstick
Add oil
Heat oil a little
Brown the onions

Add ginger, garlic, chile, and cinnamon
Stir 1/2 to 1 minute (basically, until it smells like Chinese food)
Add powdered spices
Stir 1/2 to 1 minute (again, until the smell changes, can't quantify this one)

Add chicken
Stir to coat with spices
Cook until chicken browns

Add salt
Add tomato option
Can add a little water at this point
Simmer ~ 25 minutes
(Here's where you start the rice if you're going to eat this right away)

Optional: stir in yogurt or cream

For many months now, I've been trying to learn to make a basic chicken curry.

Despite the fact I have the instructions written down, I haven't considered myself able to do it. I tend to get into the most trouble in the kitchen when trying something I think I can do, but trying it on my own, without supervision or help. I'll end up ruining it for sure. Naturally, I get awfully tired of that. Last time I was bold enough to do something that stupid it took nearly a week to get the stench out of the house.

I am pleased to report that last night I passed my checkride. I made a batch of chicken curry WITH supervision but WITHOUT help, and I didn't ruin it.

This roast pheasant recipe is AMAZING.

I brined for four hours, with two bay leaves in the brine. We threw a couple shallots and two more bay leaves into the cavity, I basted with butter, and we put black pepper and savory all over the outside.

I had never before cooked a pheasant. I had never before EATEN pheasant. But oh man this was delicious. And now I have a bunch of pieces for soup, and a chunk to reheat with potatoes and peas, and a chunk to make a cold “salad” with rice. Mmmmmmm.

I shall have to figure out how to add pics. It looked all fancy and stuff.

Yesterday turned out to be a better day than I had feared. Yay!

Good things:
- My freezer is FULL of really yummy food.
- The house doesn't smell nearly as strongly as one might expect given the above sentence.
- Multiple must-do difficult tasks got accomplished and one more is soon to be done.

To do "tomorrow" (today when I wake up, presuming I do get back to sleep):
- One more hard must-do task
- Repair a reusable grocery bag, using that as a First Sewing Machine Project for someone who just learned this weekend to thread one and run it
- Maybe some holiday prep

I have had this book since 1989 and finally agreed to attempt a recipe from it.

I had a ton of help. I don't cook, you see. But my partner in crime doesn't read French, so I did contribute to the overall project! I did!

Yes, the recipe was a total pain in the ass. Raise your hand if you're shocked. On the other hand, it did indeed taste good when it was done. Potato croquettes. Secret power = nutmeg. Challenges included the lack of quantities for seasonings, including the nutmeg.

It amuses me that there are no reviews at all of this book on Amazon. It would also amuse me if the first review were created by an English-speaking non-cook... but not enough for me to go write a basically useless review.

I'm home by myself this evening. Rob's traveling, house guests (my parents) are an hour's drive away hanging out with my sister and her family, invited another person to dinner because he's in the area but he said no he's tired, so it's just me.

Should I Door Dash something? I look in fridge. Hmm, not much there. I do have the makings for palak paneer.

For the first time in probably my whole life, I am choosing to make something* NOT because I'm required to and NOT because the act of making it is a social activity but because I would like to eat it.

I may still wimp out. But I'm defrosting the paneer. :)

(* not counting baking. Baking is fun and often creates yummy things.)
