Apricots

Dicing dried apricots is annoying.

I have spoken.

Agreed. But the results are usually very worth it :)

i believe dipping the knife in hot water between chops is supposed to help. either that, or it'll make a bigger, stickier mess.

i hope the end result is worth the effort!!

By the way, thanks muchly for mentioning this - I tried it for the ones I had remaining and it did indeed go much faster and easier. That was a great help!

The end result was good but not quite as good as it would need to be for me to do it lots of times :-). I really liked those almond ones though. I'm going to go buy more butter and then try to figure out what goes into the next bunch! :-)

Wet scissors. I know the cookies are already made, but in case you want to try it again some day -- try wet scissors. Big glass of warm water, dip the blades of the scissors in every so often, and snip away. :)
